Frittata

What I lovely long weekend it has been; I'm sad to see it end. Before I go back to reality of life. I thought I should cook myself a lovely brunch. Nowadays I don't have time to have a sit down breakfast but when I get the time to cook for myself I take full advantage of my time to do so.

Lately I have been loving recipes from the cook book "

Kitchen & Co

" by French & Grace. The recipes are easy but very delicious. For my recipe of the week I picked one of their recipes "Late breakfast on a summer's weekend Goat Cheese and Herb Frittata with Chile." Similar recipe to this

The great thing about this recipe you can make this recipe your own by adding or substituting for ingredients you love. This is my take of this recipe. The only sad thing about my Frittata, I forgot to add bacon.

On a medium frying pan I started with my potatoes which I roasted with olive oil till golden brown. Then I set the cooked potatoes to the side.

on the same pan added a tablespoon of olive oil, bell Peppers (red,yellow, and orange) with two shallots, chili Powder, some turmeric,  salt and pepper to toast and let it cook for about 5 minutes.

once my peppers and shallots are cooked I added the roasted potatoes back into the pan.

While my ingredients are still cooking on a low medium heat; I added two beat eggs on top of everything. I let my eggs cook but still watching to make sure the heat is not to high or the eggs will burn.

This is where you add your cheese (optional) before place it under the boiler. Half way through the cooking process I place the half cooked Frittata into the over to finish cooking. it shouldn't take more than a minute or two under the boiler. watch your Frittata doesn't burn.

Out of the overs it comes and you have a well cooked Frittata.
